Every Italian region has its own ingredients drawn from its own soil, climate, and the families who have refined a craft across generations. What makes a true Italian specialty is the symmetry between the origin that gives an ingredient its character and the care that preserves that character from the field to the table. We choose accordingly, region by region and artisan by artisan, judging an ingredient by its origin and the hands that shape it.
That is why provenance is a sourcing discipline for us, not a marketing word. We source from artisans who can tell you about how their land produces a superior quality in their food. We bring these specialties to Canadian kitchens while preserving the character their origin gives them. We carry only what we would be proud to place in front of a discerning chef: quality that people who cook for a living will notice and respect.
